Description
This fluffy pancake recipe is a tribute to cherished traditions, bringing the comforting flavors of fall to your breakfast table any time of the year.
Ingredients
Scale:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup milk (or milk alternative)
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 medium apple, peeled and diced
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
- In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until fully blended.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; it's okay if small lumps remain.
- Fold in the diced apples, ensuring they are evenly distributed throughout the batter.
- Let the batter rest for about 5-10 minutes while you preheat a non-stick skillet or griddle over medium heat.
- Once hot, lightly grease the skillet with butter or cooking spray. Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look slightly dry, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
- Remove from the skillet and keep warm in an oven set to low heat while you repeat with the remaining batter.
