  1. Preheat your oven to 400°F (200°C). This temperature helps to crisp the chicken skin while cooking the apples and shallots to perfection.
  2. In a large bowl, whisk together olive oil, Dijon mustard, thyme, salt, pepper, and apple cider vinegar. This will be your shallot chicken marinade.
  3. Add the chicken thighs to the bowl, ensuring they are well-coated with the marinade. Let them marinate for about 15 minutes while you prepare the other ingredients.
  4. In a large oven-safe skillet, heat a little olive oil over medium heat. Once hot, add the sliced shallots and sauté until they are translucent and slightly caramelized, about 4-5 minutes.
  5. Add the sliced apples to the pan with the shallots and continue to cook for an additional 3-4 minutes until they soften slightly.
