1 cup pineapple chunks (fresh or canned, drained if canned)
1/2 cup brown sugar (packed)
1/4 cup soy sauce (low-sodium recommended)
1 tablespoon apple cider vinegar
1 teaspoon minced garlic
1 teaspoon minced ginger (optional)
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Instructions
Preheat your oven to 375°F (190°C).
Rub the chicken breasts with olive oil and season generously with salt and pepper. Place them in a baking dish.
