A flavorful marinade that infuses chicken with a delightful mix of spices and smoky chipotle flavor, perfect for grilling, baking, or sautéing.
Ingredients

- 2 teaspoons chipotle powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 2 tablespoons honey
- 2-3 chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce
- 2 tablespoons fresh cilantro, chopped
- 4 cloves garlic, minced
Instructions
- In a medium bowl, combine the dry ingredients: chipotle powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Mix well.
- Slowly whisk in the olive oil, lime juice, honey, chipotle peppers, and adobo sauce until smooth and well-combined.
- Stir in the chopped cilantro and minced garlic.
- Place about 2 pounds of chicken in a resealable plastic bag or glass dish. Pour the marinade over the chicken and massage to coat.
- Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 2 hours, ideally overnight.
- Preheat your grill to medium-high heat. Remove chicken from the marinade and grill for 6-8 minutes per side or until cooked through.
- Let the chicken rest for 5-10 minutes before slicing. Serve as desired.
