A mouthwatering dish of marinated chicken skewers dripping in a delicious cheesy garlic sauce, perfect for summer grilling or as an appetizer.

1.5 pounds Boneless, skinless chicken breasts
4 Garlic cloves, minced
1/4 cup Olive oil
2 tablespoons Lemon juice
1/4 cup Fresh parsley, chopped
1 teaspoon Salt
1/2 teaspoon Black pepper
1 cup Shredded mozzarella cheese
6-8 Skewers (wooden or metal)
Instructions
Begin by preparing the marinade. In a bowl, combine minced garlic, olive oil, lemon juice, parsley, salt, and black pepper. Mix well to create a fragrant garlic herb marinade.
Cut the chicken breasts into 1-inch cubes. This size ensures even cooking and quick marination.
Add the chicken cubes to the marinade, making sure each piece is thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
While the chicken marinates, preheat your grill to medium-high heat (about 375°F) and soak the wooden skewers if using.
Once marinated, thread the chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
Place the skewers on the preheated grill. Grill the chicken for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
In the last few minutes of grilling, sprinkle the shredded mozzarella cheese over the skewers. Close the grill lid to allow the cheese to melt, approximately 2-3 minutes.
Remove the skewers from the grill and let them rest for a couple of minutes before serving.
