1 pound lean ground beef
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) refried beans
1 medium onion, diced
2 cloves garlic, minced
2 tablespoons taco seasoning
1 can (10 ounces) diced tomatoes with green chilies
2 cups shredded cheese (cheddar or Mexican blend)
1 cup corn tortilla chips, crushed
Fresh cilantro, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C) to ensure it’s ready for baking.
In a large skillet over medium heat, brown the ground beef until no longer pink, about 5-7 minutes. Drain excess grease.
Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.
Stir in the taco seasoning, black beans, refried beans, and diced tomatoes. Cook for another 3-5 minutes until heated through.
In a 9x13 inch baking dish, layer half of the beef and bean mixture, followed by half of the crushed tortilla chips. Sprinkle with one cup of shredded cheese.
Repeat the layering process with the remaining beef mixture, chips, and top with the remaining cheese.
Bake uncovered for 25-30 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven, let cool for a few minutes, and garnish with chopped cilantro if desired.
