2 pounds boneless, skinless chicken thighs
1/4 cup olive oil
4 cloves garlic, minced
1/4 cup lemon juice (freshly squeezed)
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon paprika
1/2 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a large mixing bowl, combine olive oil, minced garlic, lemon juice, cumin, coriander, paprika, cinnamon, salt, and black pepper. Whisk until well blended.
Add the chicken thighs to the bowl, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 2 hours, or ideally overnight for maximum flavor.
