A vibrant and satisfying dish that reimagines a classic salad into a fun, easy-to-eat format.
Ingredients

1 pound Chicken breast, cubed
4 slices Bacon, cooked and chopped
1 cup Cherry tomatoes
1 medium Cucumber, sliced
1 small Red onion, cut into wedges
1 cup Romaine lettuce leaves, chopped
1/2 cup Blue cheese, crumbled
3 tablespoons Olive oil
Salt to taste
Pepper to taste
8-10 Skewers (wooden or metal)
Instructions
Preheat your grill to medium-high heat (about 400°F).
In a bowl, combine the cubed chicken with olive oil, salt, and pepper. Mix well to coat.
Thread the chicken onto skewers, alternating with cherry tomatoes, cucumber slices, and red onion wedges. Leave a little space between each piece for even cooking.
Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
During the last few minutes of cooking, sprinkle the chopped bacon over the skewers to heat through.
Once done, remove the skewers from the grill and let them rest for a few minutes.
To serve, place the skewers on a platter and top with chopped romaine and crumbled blue cheese. Drizzle with your favorite dressing if desired.
