1 pound Boneless, skinless chicken breasts
1 teaspoon Salt
1/2 teaspoon Black pepper
2 tablespoons Olive oil
2 tablespoons Butter
1 medium Onion, diced
2 cloves Garlic, minced
2 medium Apples, cored and sliced (preferably tart varieties like Granny Smith)
1 cup Chicken broth
1/2 cup Heavy cream
1 teaspoon Thyme, fresh (or 1/2 teaspoon dried)
1 tablespoon Parsley, chopped (for garnish)
Instructions
Season the chicken breasts with salt and black pepper. Make sure to coat them evenly for the best flavor.
In a large skillet, heat olive oil over medium heat. Once hot, add the chicken and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove chicken from the skillet and set aside.
Add butter to the same skillet. Once melted, add diced onion. Sauté for about 3-4 minutes until softened.
Stir in minced garlic and cook for an additional minute until fragrant, being careful not to burn it.
