1 cup Long-grain white rice
2 cups Chicken broth
1 cup Heavy cream
4 cloves, minced Garlic
2 tablespoons, chopped Fresh parsley
1 cup Shredded cheddar cheese
Salt to taste
Pepper to taste
2 cups, chopped Vegetables (e.g., broccoli, carrots)
Instructions
Preheat your oven to 375°F (190°C). This ensures that the chicken and rice bake evenly.
In a large mixing bowl, combine the rice, chicken broth, heavy cream, minced garlic, parsley, salt, and pepper. Stir until well mixed.
In a greased 9x13 inch baking dish, spread the uncooked rice mixture evenly.
Season the chicken breasts with salt and pepper, then place them on top of the rice mixture.
Add the chopped vegetables around the chicken breasts.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and sprinkle the shredded cheese on top.
Return to the oven and bake uncovered for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
Let the dish rest for about 5 minutes before serving.
