Instructions
Preheat your oven to 400°F (200°C). This temperature is ideal for roasting the pumpkin and apples, bringing out their flavors.
In a large bowl, combine the cubed pumpkin and chopped apples. Drizzle with olive oil and sprinkle with salt. Toss until evenly coated.
Spread the pumpkin and apple mixture on a baking sheet in a single layer. Roast for 25-30 minutes, until they are tender and beginning to caramelize.
In a large pot, sauté the chopped onion and minced garlic over medium heat until the onion is translucent, about 5-7 minutes. This step builds a flavor base for the soup.
