- 1 tablespoon olive oil
- 2 tablespoons homemade taco seasoning
- 8 crispy taco shells (gluten-free if needed)
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (optional)
- cilantro lime dressing to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a medium bowl, combine the black beans, olive oil, and homemade taco seasoning. Mash the mixture slightly with a fork to create a chunky filling.
- Fill each taco shell with the black bean mixture, packing it lightly to ensure it doesn’t spill out during cooking.
- Place the filled taco shells in the air fryer basket, ensuring they are not overcrowded. You may need to work in batches.
