Crispy Mexican Smashburger Quesadillas

  1. In a skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes.
  2. Once the beef is cooked through, drain any excess fat. Stir in the taco seasoning and a splash of water, allowing it to simmer for another 2 minutes.
  3. Take a large non-stick skillet and heat it over medium-high heat. Add a drizzle of olive oil.
  4. Place one tortilla in the skillet. On one half of the tortilla, layer ½ cup of the cooked beef and top with ½ cup of shredded cheese.
  5. Fold the tortilla over to create a half-moon shape, pressing gently with a spatula. Cook for about 3-4 minutes or until the bottom is golden brown and crispy.
  6. Carefully flip the quesadilla and cook for an additional 3-4 minutes until the other side is likewise golden and crisp, and the cheese is fully melted.
  7. Remove the quesadilla from the skillet and let it sit for a minute before cutting it into wedges. Repeat the process with the remaining tortillas, beef, and cheese.
