- 2 cups dry white beans (e.g., navy or great northern), soaked overnight
- 3 cups diced potatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 teaspoon salt (to taste)
- 1/2 teaspoon pepper (to taste)
Instructions
- Soak the dry white beans overnight in water. This helps them cook evenly and reduces overall cooking time.
- In the morning, drain and rinse the soaked beans. Place them in the crockpot.
- Add the diced potatoes, chopped onion, and minced garlic to the crockpot.
- Slice the smoked sausage and add it to the mixture in the crockpot.
- Pour the chicken broth over the ingredients, ensuring everything is submerged. Add thyme, bay leaves, salt, and pepper.
- Cover the crockpot with the lid and cook on low for 6-8 hours, or on high for 3-4 hours. The dish is ready when the beans and potatoes are tender.
