  1. In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and sesame oil.
  2. Place the flank steak in a large resealable bag or shallow dish. Pour the marinade over the steak, ensuring it's well-coated. Seal the bag or cover the dish, then refrigerate for at least 1 hour, or ideally overnight.
  3. Heat vegetable oil in a skillet over medium-high heat. Remove the steak from the marinade and sear it in the hot skillet for 2-3 minutes on each side until browned.
  4. Place the marinated (and browned, if preferred) steak into the slow cooker. Pour the remaining marinade over the top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the steak is fork-tender.
  6. Once cooked, remove the steak from the crockpot and let it rest for a few minutes before slicing against the grain.
