Ingredients
Scale:
1 pound Boneless, skinless chicken breasts
2 tablespoons Olive oil
1 tablespoon Chili powder
1 teaspoon Ground cumin
1 teaspoon Garlic powder
1 teaspoon Salt
½ teaspoon Black pepper
4 Large flour tortillas
2 cups Cilantro lime rice
1 cup Shredded cheese (cheddar or Mexican blend)
½ cup Homemade burrito sauce
¼ cup Chopped fresh cilantro
1 cup Diced tomatoes
1 (optional) Avocado or guacamole
Instructions
Heat olive oil in a large skillet over medium heat.
Season the chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.
Add the seasoned chicken to the skillet. Cook for 5-7 minutes on each side until the chicken is golden brown and reaches an internal temperature of 165°F.
Remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
While the chicken is resting, prepare the cilantro lime rice according to package instructions or your favorite recipe.
Warm the tortillas in a dry skillet for about 30 seconds on each side until pliable.
To assemble the burritos, place a portion of the cilantro lime rice, sliced chicken, cheese, and any other desired toppings onto the center of each tortilla.
Fold the sides of the tortilla in, then roll it up tightly from the bottom to the top. Repeat with remaining tortillas.
