This recipe draws from the classic Italian Caprese salad, which traditionally features just tomatoes, mozzarella, and basil. By adding chicken and avocado, we create a satisfying meal that’s perfect for a light lunch or a refreshing summer dinner.

Boneless, skinless chicken breasts - 2 (about 1 lb)
Salt - 1 teaspoon
Black pepper - ½ teaspoon
Olive oil - 2 tablespoons
Fresh mozzarella cheese - 8 oz, sliced
Cherry tomatoes - 1 cup, halved
Fresh basil leaves - ½ cup, torn
Avocado - 1, diced
Balsamic reduction - 2 tablespoons
Instructions
Preheat your grill or grill pan over medium-high heat. If you're using a grill, ensure the grates are clean and lightly oiled to prevent sticking.
While the grill is heating up, season the chicken breasts with salt and black pepper on both sides.
Drizzle olive oil over the chicken breasts to coat them evenly. This helps achieve a golden-brown crust on the grill.
Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute for a tender bite.
While the chicken is resting, prepare the salad. In a large bowl, combine the cherry tomatoes, fresh mozzarella, avocado, and torn basil leaves.
Slice the grilled chicken into thin strips and add it to the salad mixture.
Drizzle the balsamic reduction over the salad and toss gently to combine all ingredients without bruising the avocado.
