Ingredients

- 2 pounds Beef chuck roast, cut into 1-inch cubes
- 4 medium Potatoes, diced (Yukon Gold or Russet)
- 2 large Carrots, sliced
- 1 medium Onion, chopped
- 4 cloves Garlic, minced
- 4 cups Beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 teaspoon Thyme (dried)
- 1 Bay leaf
Instructions
- Prepare the beef by trimming any excess fat and cutting it into 1-inch cubes.
- In a large skillet over medium heat, brown the beef cubes for about 5 minutes until they develop a nice crust.
- Transfer the browned beef to the crockpot.
- Add diced potatoes, sliced carrots, chopped onion, and minced garlic to the crockpot.
- Pour in the beef broth and Worcestershire sauce. Stir to combine.
- Season with salt, black pepper, dried thyme, and add the bay leaf.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are cooked through.
- Once done, remove the bay leaf and serve hot, garnished with fresh parsley if desired.
