These Easy Pumpkin S’mores Cookies are not just a treat; they’re a cozy hug in cookie form, perfect for fall gatherings or simply indulging at home on a chilly evening.
Ingredients
Scale:
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar, packed
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup pumpkin puree
1 large egg
1 teaspoon vanilla extract
1 cup milk chocolate chips
1 cup marshmallows, mini or chopped
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 2-3 minutes.
Add in the pumpkin puree, egg, and vanilla extract. Mix until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Fold in the chocolate chips and marshmallows, ensuring they are evenly distributed throughout the dough.
Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look soft and slightly underbaked.
Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
