A comforting dish that transforms humble baked potatoes into a fiesta on your plate. Imagine perfectly baked potatoes topped with savory taco-seasoned beef, melted cheese, and all your favorite toppings, making for a satisfying meal that the entire family will love.
Ingredients
Scale:
4 medium-sized baking potatoes
1 pound ground beef
2 tablespoons taco seasoning
1/4 cup water
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions
1/2 cup diced tomatoes
2 tablespoons olive oil
Salt and pepper to taste
Instructions
Preheat your oven to 425°F (220°C). Wash and scrub the baking potatoes to remove any dirt.
Prick each potato several times with a fork. Rub them with olive oil and sprinkle with salt. This enhances the flavor and helps create a crispy skin.
Place the potatoes directly on the oven rack and bake for about 45-60 minutes, until they are tender when pierced with a fork.
Meanwhile, in a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Drain excess grease if necessary, then add the taco seasoning and water. Stir well, letting it simmer for about 5 minutes until thickened.
Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise and fluff the insides with a fork.
Spoon the seasoned beef mixture generously onto each potato half, followed by a sprinkle of shredded cheese. Return them to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Remove the potatoes from the oven and top with sour cream, diced tomatoes, and chopped green onions before serving.
