2 cups Plain Greek yogurt
1 cup Peanut butter
2 tablespoons Honey or maple syrup
1 teaspoon Vanilla extract
1/2 cup Chocolate chips (optional)
1/2 cup Chopped nuts or dried fruit (optional)
Instructions
In a large mixing bowl, combine the Greek yogurt and peanut butter. Use a spatula to mix until well combined; the mixture should be smooth and creamy.
Add honey (or maple syrup) and vanilla extract to the bowl. Stir thoroughly to incorporate all the ingredients.
If desired, fold in chocolate chips, nuts, or dried fruit at this stage for added texture and flavor.
Using a small cookie scoop or your hands, form the mixture into small balls, about 1 inch in diameter.
Place the yogurt balls on a baking sheet lined with parchment paper. Make sure they are spaced apart to prevent sticking.
Transfer the baking sheet to the freezer and freeze for at least 1 hour, or until the balls are firm.
Once frozen, remove the yogurt balls from the baking sheet and store them in an airtight container in the freezer for up to 2 months.
