In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water before draining.
While the pasta cooks, season both sides of the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest before slicing.
In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the minced garlic and sauté for about 1 minute.
Pour in the heavy cream, stirring continuously. Let it simmer for about 3-4 minutes until it thickens slightly.
