Ingredients

8 ounces Fresh mozzarella cheese, sliced
2 large Tomatoes, sliced
1/2 cup Fresh basil leaves
4 slices Ciabatta or sourdough bread
2 tablespoons Balsamic glaze
2 tablespoons Olive oil
Salt, to taste
Pepper, to taste
Instructions
Preheat a skillet or a panini press over medium heat. If using a skillet, lightly grease it with olive oil.
Layer the bottom slice of bread with fresh mozzarella slices, followed by tomato slices, and basil leaves.
Drizzle the balsamic glaze over the top of the basil, and season with salt and pepper to taste.
Top with the second slice of bread.
Carefully place the sandwich in the preheated skillet or panini press. Cook for about 3-5 minutes on each side or until the bread is golden brown and the cheese is melted.
Remove from the heat and let it sit for a minute before slicing in half to allow the cheese to set slightly.
Serve immediately, optionally drizzled with extra balsamic glaze.
