  1. Preheat the grill to medium-high heat (about 400°F). This temperature is ideal for caramelizing the sugars in the peaches.
  2. While the grill is heating, wash and dry the peaches. Cut each peach in half and remove the pit. If desired, you can also slice them into quarters for smaller pieces.
  3. Brush the cut side of each peach half with olive oil to prevent sticking and help achieve that beautiful grill mark.
  4. Sprinkle honey and cinnamon on the cut sides for added sweetness and flavor, if desired.
  5. Place the peaches cut side down on the grill. Close the lid and grill for about 4-6 minutes, until grill marks appear and the peaches soften slightly.
  6. Carefully flip the peaches over and grill for an additional 2-3 minutes. The goal is to achieve a caramelized exterior while keeping the inside juicy.
  7. Remove the peaches from the grill and drizzle with balsamic glaze for an extra layer of flavor. Serve warm with a scoop of vanilla ice cream.
