1 lb ground beef (preferably 80/20)
2 medium sweet potatoes, peeled and cubed (about 3 cups)
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
Salt and pepper to taste
1/2 cup beef broth or stock
Fresh cilantro, chopped (for topping)
Avocado, sliced (optional, for topping)
Greek yogurt or sour cream (for topping)
Chili flakes (optional, for topping)
Instructions
Heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion and cook for about 3-4 minutes, or until the onions are translucent and slightly golden.
Add the minced garlic, stirring for an additional 30 seconds until fragrant.
Increase the heat to medium-high and add the ground beef. Cook for about 5-7 minutes, or until browned and no longer pink.
While the beef is cooking, steam the cubed sweet potatoes until fork-tender, about 10-15 minutes.
Once the beef is cooked, drain any excess fat if necessary. Stir in the smoked paprika, cumin, salt, and pepper.
Pour in the beef broth and bring the mixture to a simmer. Cook for an additional 5 minutes.
Combine the sweet potatoes with the beef mixture in the skillet. Gently fold them together until well mixed.
Remove from heat and transfer the mixture to serving bowls. Top with chopped cilantro, sliced avocado, Greek yogurt or sour cream, and chili flakes if desired.
