A comforting and cheesy casserole that combines ground beef with tender zucchini, perfect for busy weeknights.
Ingredients
Scale:
- 1 pound Ground beef
- 2 medium Zucchini, sliced
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Tomato sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1 cup Shredded cheese (mozzarella or cheddar)
- 1 tablespoon Olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until softened.
- Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the tomato sauce, Italian seasoning, salt, and pepper. Let simmer for 5 minutes, allowing the flavors to meld.
- In a greased 9x13-inch baking dish, layer half of the sliced zucchini on the bottom.
- Spread half of the meat mixture over the zucchini, followed by another layer of the remaining zucchini. Top with the rest of the meat mixture.
- Sprinkle the shredded cheese evenly on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving to allow the layers to set.
