1 pound Ground beef
3 medium Zucchini, sliced
1 medium Onion, chopped
2 cloves Garlic, minced
1 can (14.5 ounces) Diced tomatoes, canned
1 teaspoon Italian seasoning
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 cup Shredded cheddar cheese
1/2 cup Parmesan cheese, grated
2 tablespoons Olive oil
Instructions
Preheat your oven to 375°F (190°C) to prepare for baking.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Let this mixture simmer for 5 minutes to meld the flavors.
In a large baking dish, layer half of the zucchini slices at the bottom. Pour half of the beef mixture over the zucchini, then sprinkle half of the cheddar cheese.
Repeat the layers with the remaining zucchini, beef mixture, and top with the remaining cheddar cheese and the Parmesan cheese.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Once baked, let it cool for a few minutes before serving. This allows the layers to set, making it easier to slice.
