This recipe not only satisfies your cravings but also brings a taste of Mexico right into your kitchen. Perfect for lunch, dinner, or as a party appetizer, these taquitos are sure to become a family favorite.
Ingredients
Scale:
2 cups shredded cooked chicken
1 cup shredded cheese (cheddar or Mexican blend)
10-12 flour or corn tortillas
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
Salt to taste
Pepper to taste
Salsa (for dipping) as needed
Instructions
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine the shredded chicken, cheese, cumin, chili powder, garlic powder, salt, and pepper. Mix well until everything is evenly coated.
Warm the tortillas in the microwave for about 30 seconds to make them pliable. This prevents them from cracking when you roll them.
Place about 2 tablespoons of the chicken filling onto each tortilla, spreading it slightly towards one end. Roll tightly, and place seam-side down on a baking sheet lined with parchment paper.
Brush the tops of the taquitos with olive oil to promote crispiness while baking.
Bake for 15-20 minutes, or until the tortillas are golden brown and crispy. Keep an eye on them to prevent burning.
Remove from the oven and let them cool slightly before serving with salsa.
