1/2 cup extra virgin olive oil
1/4 cup fresh lemon juice (about 2 lemons)
4 cloves garlic, minced
2 tablespoons red wine vinegar
1 tablespoon dried oregano
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
2 pounds of steak (ribeye, sirloin, or flank steak work well)
Instructions
In a medium bowl, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, red wine vinegar, dried oregano, fresh parsley, salt, and black pepper. Ensure that all ingredients are well combined.
Place the steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, making sure it’s well-coated on all sides. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.
Preheat your grill to medium-high heat (about 450°F/230°C).
Take the steak out of the marinade and let any excess drip off. Pat the steak dry with paper towels.
Place the steak on the grill. Cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.
Once cooked, remove the steak from the grill and let it rest for at least 5-10 minutes.
After resting, slice the steak against the grain for tenderness.
