Preheat your oven to 375°F (190°C) if you are baking the chicken.
In a bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper until well combined.
Place the chicken breasts in a large ziplock bag or a shallow dish, then pour half of the honey mustard mixture over the chicken. Seal or cover and marinate in the fridge for at least 30 minutes, or up to 4 hours for best results.
Remove the chicken from the marinade and discard the used marinade. Place the chicken in a baking dish or on a grill.
Bake for 25-30 minutes in the oven or grill for about 6-7 minutes per side until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
Brush the remaining honey mustard sauce over the chicken during the last 5 minutes of cooking for an extra flavor boost.
