1 pound Ground beef (80/20 for best flavor)
1 cup Swiss cheese, shredded
8 ounces Button mushrooms, sliced
2 tablespoons Olive oil
2 cloves Garlic, minced
1 medium Onion, diced
Salt to taste
Pepper to taste
4 cups Mixed greens (for serving)
Instructions
In a large skillet, heat the olive oil over medium heat.
Add the diced onion and sauté until translucent, about 3-4 minutes.
Add the sliced mushrooms and minced garlic. Cook until mushrooms are golden brown, about 5-6 minutes. Stir occasionally to prevent sticking.
Push the mushroom mixture to one side of the skillet and add the ground beef to the other side. Season with salt and pepper.
Cook the beef until browned, breaking it apart with a spatula, about 5-7 minutes.
