2 pounds Boneless, skinless chicken thighs
2 cups Fresh cranberries
1 cup Fresh orange juice
1/4 cup Honey
1/4 cup Soy sauce
3 cloves Garlic, minced
1 teaspoon Ground ginger

1/4 teaspoon Black pepper
Optional: Fresh parsley, chopped (for garnish)
Instructions
Place the boneless, skinless chicken thighs at the bottom of the slow cooker. This will help them cook thoroughly.
In a separate bowl, combine the fresh cranberries, orange juice, honey, soy sauce, minced garlic, ground ginger, salt, and black pepper. Mix well to create the sauce.
Pour the cranberry-orange sauce over the chicken in the slow cooker, ensuring that the chicken is well coated.
Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be tender and the sauce bubbling.
Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce and stir to combine.
