This recipe for slow cooker meat pies offers nostalgic comfort with minimal effort, making it a go-to for busy weeknights or lazy weekends.
Ingredients
Scale:
1 pound ground beef
2 cups potatoes, peeled and diced
1 medium onion, chopped
1 cup carrots, diced
1 cup frozen peas
2 cups beef broth
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons all-purpose flour
2 pie crusts (store-bought or homemade)
Instructions
In a large skillet, brown the ground beef over medium heat. Drain excess fat and transfer the beef to the slow cooker.
Add the diced potatoes, chopped onion, diced carrots, and frozen peas to the slow cooker.
In a bowl, whisk together the beef broth, Worcestershire sauce, thyme, salt, black pepper, and flour. Pour this mixture over the meat and vegetables in the slow cooker.
Stir everything together until well combined. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
Once cooked, remove the filling from the slow cooker and let it cool for about 15 minutes.
Preheat your oven to 400°F (200°C). Roll out the pie crusts and place one in a pie dish. Spoon the meat filling into the crust, then cover with the second pie crust. Seal the edges and cut slits for steam to escape.
Bake for 25-30 minutes, or until the crust is golden brown. Let it cool for a few minutes before serving.
