Scale:
- 2 cups All-purpose flour
- 2 teaspoons Baking powder
- 1/2 teaspoon Salt
- 1 cup Granulated sugar
- 1/2 cup Unsalted butter, softened
- 3 large Eggs
- 1 cup Apricot nectar
- 1/2 cup Plain yogurt
- 1 teaspoon Vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl to ensure even mixing.
- Mix in the apricot nectar, yogurt, and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined to avoid overmixing.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, you can dust the top with powdered sugar or serve with a dollop of whipped cream for an extra touch.
