Ingredients
Scale:
1 pound shrimp, peeled and deveined
4 cups kale, chopped
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 cup cherry tomatoes, halved
1 large avocado, diced
½ cup feta cheese, crumbled (optional)
Instructions
In a bowl, toss the shrimp with olive oil and Cajun seasoning until evenly coated.
Heat a skillet over medium-high heat. Once hot, add the seasoned shrimp and cook for 2-3 minutes per side, or until they turn pink and slightly charred. Remove from heat and set aside.
While the shrimp are cooking, prepare the kale by massaging it with a pinch of salt for about 2 minutes until it becomes tender and dark green.
Add the halved cherry tomatoes and diced avocado to the kale, mixing gently to combine.
Top the salad with the blackened shrimp and sprinkle with feta cheese, if using.
Drizzle with your favorite spicy salad dressing or zesty citrus dressing before serving.
