1 package (about 14 oz) flaky pastry dough (store-bought or homemade)
1 lb spicy sausage (bulk or links, casings removed)
2-3 fresh jalapenos (finely chopped)
2 cups shredded cheese (cheddar or pepper jack)
1 beaten egg (for egg wash)
Salt and pepper (to taste)
Instructions
Preheat your oven to 400°F (200°C).
Roll out the flaky pastry dough on a lightly floured surface. Cut it into squares that fit into your tart pans.
In a skillet over medium heat, cook the spicy sausage until it’s browned and fully cooked, about 6-8 minutes. Drain excess fat and let cool slightly.
Add in the finely chopped jalapenos, mixing well. Season with salt and pepper to taste.
Place the pastry squares into the tart pans. Fill each tart with about 1-2 tablespoons of the sausage and jalapeno mixture.
Top each tart with a generous amount of shredded cheese.
Brush the edges of the pastry with the beaten egg to give them a beautiful golden finish.
Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the cheese is bubbly.
Remove from the oven and let cool slightly before serving.
