Steak Fajita Sliders are the ultimate crowd-pleaser, perfect for parties, game days, or a delightful family dinner. Imagine juicy, marinated flank steak grilled to perfection, nestled between fluffy homemade slider buns, and topped with sautéed bell peppers and onions.
Ingredients

1 pound flank steak
2 tablespoons olive oil
2 tablespoons lime juice (freshly squeezed)
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
12 mini slider buns (homemade or store-bought)
1 medium bell pepper (red or green), sliced
1 medium onion, sliced
1 tablespoon butter
Zesty lime crema (store-bought or homemade)
Spicy aioli (optional)
Shredded cheese (cheddar or pepper jack)
Fresh cilantro, for garnish
Instructions
Marinate the Steak: In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the flank steak, ensuring it’s well-coated on all sides. Cover with plastic wrap and marinate in the fridge for at least 15 minutes (or up to 2 hours).
Preheat the Grill: Preheat your grill or cast iron skillet over medium-high heat.
Grill the Steak: Remove the flank steak from the marinade and discard the excess marinade. Grill for about 5-7 minutes per side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.
Sauté the Vegetables: Melt butter in a skillet over medium heat. Add sliced bell pepper and onion, sauté for about 5-7 minutes until soft.
Slice the Steak: Thinly slice the rested flank steak against the grain.
Assemble the Sliders: Cut the slider buns in half, layer sliced steak, sautéed peppers and onions, and your choice of toppings.
