Instructions

  1. Marinate the Steak: In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the flank steak, ensuring it’s well-coated on all sides. Cover with plastic wrap and marinate in the fridge for at least 15 minutes (or up to 2 hours).
  2. Preheat the Grill: Preheat your grill or cast iron skillet over medium-high heat.
  3. Grill the Steak: Remove the flank steak from the marinade and discard the excess marinade. Grill for about 5-7 minutes per side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.
  4. Sauté the Vegetables: Melt butter in a skillet over medium heat. Add sliced bell pepper and onion, sauté for about 5-7 minutes until soft.
  5. Slice the Steak: Thinly slice the rested flank steak against the grain.
  6. Assemble the Sliders: Cut the slider buns in half, layer sliced steak, sautéed peppers and onions, and your choice of toppings.
  7. Serve: Top with the other half of the bun and serve with a side of crispy tortilla chips or a fresh salad.
