Ingredients

- 1 cup egg whites (about 8 large eggs)
- 1 1/4 cups granulated sugar
- 1 cup cake flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- 2 cups whipped cream frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Make sure your oven rack is in the lower third of the oven.
- In a large mixing bowl, beat the egg whites and salt with an electric mixer on medium speed until foamy.
- Increase the speed to high and gradually add the granulated sugar, continuing to beat until the mixture forms stiff peaks (about 5-7 minutes).
- Once stiff peaks have formed, gently fold in the vanilla extract and cake flour. Be careful not to deflate the egg whites.
- Pour the batter into an ungreased 10-inch angel food cake pan. Use a spatula to spread the batter evenly.
- Bake for 35-40 minutes or until the top is lightly golden and springs back when touched.
- Invert the cake pan onto a cooling rack and allow to cool completely in the pan.
- Once cool, carefully remove the cake from the pan. Use a serrated knife to slice the cake into servings.
- Top each slice with fresh strawberries and a dollop of whipped cream frosting before serving.
