A colorful and flavorful dish combining the zest of taco seasoning with the satisfying crunch of fresh bell peppers.
Ingredients
Scale:
- 4 large bell peppers (any color)
- 1 pound ground beef (or black beans/lentils for a vegetarian option)
- 1 cup cooked rice (brown or white)
- 1 cup corn (canned or frozen)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup salsa
- 1 tablespoon taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro (for garnish)
- Avocado or guacamole (optional)
- Sour cream or Greek yogurt (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
- In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
- To the browned beef, add the cooked rice, corn, black beans, salsa, and taco seasoning. Stir until well combined.
- Spoon the beef mixture into each prepared bell pepper, filling them generously.
- Place the st■ peppers upright in a baking dish and sprinkle shredded cheese on top.
- Cover the dish with aluminum foil and bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes.
- Remove from the oven, let cool for a few minutes, garnish with fresh cilantro, and serve with desired toppings.
