  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
  3. In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
  4. To the browned beef, add the cooked rice, corn, black beans, salsa, and taco seasoning. Stir until well combined.
  5. Spoon the beef mixture into each prepared bell pepper, filling them generously.
  6. Place the st■ peppers upright in a baking dish and sprinkle shredded cheese on top.
  7. Cover the dish with aluminum foil and bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes.
  8. Remove from the oven, let cool for a few minutes, garnish with fresh cilantro, and serve with desired toppings.
