  1. In a large mixing bowl, combine the black beans, corn, cherry tomatoes, red bell pepper, red onion, avocado, and cilantro. Stir in the lime juice and ground cumin. Season with salt and pepper to taste. Set aside to allow the flavors to meld for at least 15 minutes.
  2. Lay out four tortillas on a clean surface. Evenly distribute the shredded cheese on each tortilla, followed by a generous scoop of the cowboy caviar mixture. Add another tortilla on top and press down gently.
  3. Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Test the heat by sprinkling a few drops of water into the skillet.
  4. Place the assembled quesadillas in the skillet. Cook for about 3-4 minutes on one side until golden brown and the cheese begins to melt. Use a spatula to gently press down on the quesadilla.
  5. Flip the quesadilla using the spatula and cook for an additional 3-4 minutes on the other side until crispy and golden.
  6. Add more oil or butter to the skillet if necessary and repeat the cooking process with the remaining quesadillas.
