Preheat your oven to 375°F (190°C).
Wash the zucchini and slice them into ¼-inch thick rounds. Place them on a clean kitchen towel and sprinkle with salt. Let them sit for 15 minutes to draw out excess moisture.
In a large skillet, heat the olive oil over medium heat. Add the zucchini slices in batches, cooking for about 3-4 minutes on each side until they are slightly golden. Remove and set aside on paper towels to absorb excess oil.
