1 pound Shrimp (peeled and deveined)
2 medium Cucumbers (sliced)
1 cup Cherry tomatoes (halved)
1 small Red onion (thinly sliced)
1/4 cup Fresh parsley (chopped)
3 tablespoons Olive oil
2 tablespoons Fresh lemon juice
Salt to taste
Black pepper to taste
Instructions
In a medium pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process. Set aside.
While the shrimp cools, prepare the vegetables. Slice the cucumbers, halve the cherry tomatoes, and thinly slice the red onion. Chop the parsley finely.
