- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 1/2 cup melted butter (plus more for greasing)
Instructions
- Preheat your oven to 425°F (220°C). Grease a cast iron skillet with butter and place it in the oven to heat.
- In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until well combined.
- In another bowl, whisk together the buttermilk and egg until smooth. Stir in the melted butter.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.
- Carefully remove the hot skillet from the oven. Pour the batter into the skillet, spreading it evenly.
- Bake for 20-25 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cornbread cool for a few minutes before slicing. Serve warm with additional butter if desired.
