This easy apple pie recipe is exactly what you need with its flaky pie crust and a delightful filling of sweet and tart apple flavors.

2 ½ cups all-purpose flour
1 cup unsalted butter (cold, cubed)
¾ cup granulated sugar
¼ cup brown sugar (packed)
1 tsp salt
4-6 tbsp ice water
6-8 cups apples (peeled, cored, and sliced)
1 tsp cinnamon
½ tsp nutmeg
1 tbsp lemon juice
1 tsp vanilla extract
1 egg (for egg wash, optional)
Instructions
In a large bowl, combine 2 ½ cups of all-purpose flour, 1 tsp of salt, and ¾ cup of granulated sugar. Blend well.
Add 1 cup of cold, cubed unsalted butter. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
Gradually add ice water, 1 tbsp at a time, mixing until the dough comes together. Divide into two equal portions, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
Preheat your oven to 425°F (220°C).
While the dough chills, prepare the apple filling. In a large bowl, combine sliced apples, ¼ cup of brown sugar, 1 tsp of cinnamon, ½ tsp of nutmeg, 1 tbsp of lemon juice, and 1 tsp of vanilla extract. Toss until well coated.
Roll out one dough disk on a floured surface to fit a 9-inch pie pan. Carefully place the dough in the pan, letting any excess hang over the edges.
Fill with the apple mixture, mounding slightly in the center.
Roll out the second dough disk for the top crust. You can either place it whole or cut it into strips for a lattice design. Seal the edges by crimping with your fingers or a fork.
If desired, brush the top crust with beaten egg for a golden finish.
Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbling. Let cool for at least 2 hours before slicing.
