A delightful twist on the classic Caesar salad, these wraps combine tender, juicy shrimp with crisp romaine lettuce, creamy Caesar dressing, and Parmesan cheese, all wrapped in a tortilla.

1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
4 large whole wheat or spinach tortillas
2 cups romaine lettuce, chopped
1/2 cup Caesar dressing (store-bought or homemade)
1/4 cup grated Parmesan cheese
1/4 cup cherry tomatoes, halved (optional)
Instructions
In a medium bowl, combine the olive oil, minced garlic, paprika, salt, and black pepper to create a marinade for the shrimp.
Add the peeled and deveined shrimp to the marinade, tossing to ensure they are well coated. Let them marinate for about 15 minutes.
Preheat your grill to medium-high heat (about 400°F or 200°C).
Place the marinated shrimp on the grill and cook for about 2-3 minutes on each side, or until they turn pink and opaque.
While the shrimp are grilling, lay out the tortillas on a flat surface.
Spread about 2 tablespoons of Caesar dressing on each tortilla.
Top each tortilla with a generous amount of chopped romaine lettuce, followed by the grilled shrimp.
Sprinkle each wrap with grated Parmesan cheese and cherry tomatoes if using.
Wrap each tortilla tightly, folding in the sides as you roll, and slice in half if desired.
