1 pound of boneless, skinless chicken breasts, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 small red onion, cut into wedges
Wooden or metal skewers
1/4 cup soy sauce
1/4 cup honey
2 tablespoons sriracha
2 cloves garlic, minced
1 teaspoon ginger, minced or grated
1 tablespoon rice vinegar
1 tablespoon sesame oil
Instructions
In a medium bowl, combine soy sauce, honey, sriracha, garlic, ginger, rice vinegar, and sesame oil. Whisk until the mixture is well blended.
Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
Preheat your grill to medium-high heat (about 375°F to 400°F).
Thread the marinated chicken and the chopped vegetables onto the skewers, alternating between chicken and veggies.
Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
