A rich, creamy dessert that satisfies your sweet tooth while packing a protein punch. This no-bake cheesecake recipe transforms cottage cheese into a luscious treat that's as nutritious as it is delicious.
Ingredients
Scale:
1 cup cottage cheese (low-fat or full-fat)
1 cup Greek yogurt (plain)
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1 tablespoon gelatin (or agar-agar for a vegetarian option)
2 tablespoons hot water
Your choice of toppings (fresh fruit, nuts, or chocolate chips)
Instructions
In a small bowl, dissolve the gelatin in hot water. Stir until completely dissolved and set aside.
In a blender or food processor, combine the cottage cheese, Greek yogurt, honey (or maple syrup), and vanilla extract. Blend until the mixture is smooth and creamy, about 1-2 minutes.
Pour in the dissolved gelatin and blend for an additional 30 seconds to incorporate it into the mixture.
Divide the cheesecake mixture evenly into jars or small dessert cups.
Cover the jars and refrigerate for at least 3-4 hours or until set. If you're in a hurry, a minimum of 1 hour will do.
Once set, add your favorite toppings, such as fresh berries, nuts, or chocolate chips, before serving.
