  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan, egg, minced garlic, onion powder, smoked paprika, salt, pepper, and cilantro (if using). Mix gently until well incorporated.
  3. Using your hands, form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes, or until golden brown and cooked through, checking that the internal temperature reaches 160°F (70°C).
  5. In a small saucepan, whisk together the honey, chopped chipotle peppers, soy sauce, lime juice, and garlic powder. Cook over medium heat for about 5 minutes until the sauce thickens slightly.
  6. Once the meatballs are cooked, remove them from the oven and coat them in the honey chipotle sauce.
  7. Transfer the glazed meatballs to a serving platter and garnish with extra sauce and fresh cilantro. Serve warm.
