4 cups Fresh pumpkin, diced
2 tablespoons Olive oil
1 medium Onion, chopped
3 cloves Garlic, minced
3 cups Vegetable broth
1 cup Coconut milk
1 teaspoon Salt
1/2 teaspoon Black pepper
1/4 teaspoon Ground nutmeg
1/4 teaspoon Ground cinnamon
Fresh herbs (such as thyme or parsley), for garnish (Optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Spread the diced pumpkin on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
Roast the pumpkin in the preheated oven for 25-30 minutes, or until it is tender and caramelized. Stir halfway through to ensure even roasting.
While the pumpkin is roasting, heat a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent.
