  1. Prepare the Rice: Cook the rice according to package instructions. Fluff the rice and set it aside to cool slightly.
  2. Stir-Fry the Vegetables: In a large skillet, heat sesame oil over medium heat. Add the carrots and sauté until slightly tender, about 3 minutes. Remove and set aside. Repeat with zucchini and shiitake mushrooms, cooking until golden brown.
  3. Finally, add the blanched spinach and bean sprouts, cooking for an additional 2 minutes until heated through. Adjust seasoning if needed and remove from heat.
  4. Cook the Protein: For beef, cook to your liking. For tofu, cube and marinate in soy sauce for 10 minutes, then sauté until golden brown.
  5. Prepare the Gochujang Sauce: In a small bowl, mix gochujang, sesame oil, sugar, and water until smooth.
  6. Fry the Eggs: In a non-stick skillet, fry the eggs sunny-side up.
  7. Assemble the Bibimbap: In a bowl, layer rice, stir-fried vegetables, protein, and top with fried eggs, sesame seeds, and green onions.
